Ingredients:

400g beef tenderloin

100g red onions

50g garlic

100g pickled cucumbers

30g diced parsley

100g pickled cappers

2 egg yolks

Juice of half a lemon

100ml oil

10ml ketchup

2tbs mustard

1tsp Worcestershire sauce

0.5tsp tabasco

50g paprika

20g pepper

2 salted anchovies’ fillets

10ml cognac

100g butter

Salt and pepper

Toast

Method:

Dice the meat finely to make it minced.

Dice finely all the vegetables and pickled ingredients.

Beat the egg yolks and lemon juice in a bowl, continue beating and gradually add oil to make the mayonnaise, then add chopped vegetables, seasoning, tabasco and Worcestershire sauce.

Mix well, then gradually add the chopped meat, mix. Add all the remaining ingredients except cognac and mix well so that all the ingredients blend. Finally add the cognac and using a fork and spoon mash the Beef Tatar until all the ingredients are well combined.

Serve on hot buttered toast. Enjoy!
